Post-traumatic stress disorder (PTSD) is an anxiety disorder that develops after a traumatic event, and recent PTSD clinical trials tested on rats found that blueberries could mitigate some symptoms of PTSD. In a blueberry study, the rats were given a blueberry-rich diet, which resulted in their brain’s serotonin levels increasing. The serotonin chemical signals feelings of happiness and wellbeing the brain, and for the rats, it reduces the stress and depression associated with PTSD.
Blueberry Recipes That Can Reduce Stress
The researchers from the study believe that two cups of blueberries a day could have stress-relief benefits for humans as well. This July, in honor of National Blueberry Month, try a variety of blueberry recipes. Listed below are a few examples.
- Breakfast. Smoothies are one of the best ways to start your day. Make your smoothies with blueberries, oranges, whey, and honey to boost your energy in the morning. If you prefer not to have a smoothie, consider making a blueberries muffin recipe the night before and then pop them in the microwave the following morning. And why not forgo your coffee and have a cup of blueberry green tea instead.
- Lunch. Salads make a perfect meal for lunch—they’re light and with the right ingredients, they can keep you energized for the rest of your workday. Try a salad made with mixed greens, blueberries, blue cheese, and walnuts or pecans.
- Snack. Frozen blueberries are a simple work snack and they’re absolutely refreshing in hot summer months. You could also try a snack made with Greek yogurt, raspberries, blueberries, almonds, and walnuts—it makes for a mindful, sweet lunch or snack. Granola with dried blueberries will also help you stay full throughout the day.
- Dinner. Can you really have blueberries for dinner? Absolutely! Jazz up your regular cornbread with blueberries. Eat blueberries on pizza with thyme, onion, and feta cheese. Or add blueberries to your guacamole. The possibilities are endless!
- Dessert. Blueberry pie is the classic blueberry dessert. You can make your own blueberry pie with just a few ingredients. You can also try blueberry frozen yogurt, made from real blueberries, or blueberry-lemon tarts.
